Three minutes to the break, Brobbey received a pass from Devyne Rensch inside the box and slotted the ball into the bottom left corner to make it 2-1 to Ajax before the interval.
Five minutes after the break, the 18-year-old was brought down inside the box by Elber Evora and converted the resulting penalty to put the host two goals clear.
Richonell Margaret reduced the deficit to one for the away team eight minutes later.
10-man Ajax held on for the remaining minutes to win the game 3-2 at home to secure their third win in seven games.
Brobbey has four goals in seven matches in the Netherlands second tier league.
